Breakfast can be tricky if you haven’t got a lot of time to spare in the morning. For this reason I often find myself opting for shop bought cereals, which can be high in sugar, simply because I don’t have the time to make myself a healthier alternative. Here’s where overnight oats come in.
It’s such a quick and easy breakfast to prepare, and the flavour combinations are endless. Just pop the ingredients together in a bowl to soak overnight and ta-da! Breakfast is served. If you’re the sort of person that has breakfast on-the-go or in the office, just use an air-tight container instead of a bowl.
Pineapple and coconut is one of my favourite flavour combinations. And since summer over here in Britain seems to be in full swing, I couldn’t resist putting a tropical twist on my breakfast.
Prep time: 5 minutes
1/2 cup rolled oats
2/3 cup coconut milk
1/3 cup coconut yoghurt
1 tbsp chia seeds
2/3 cup chopped fresh or tinned pineapple
Some desiccated or flaked coconut, to serve (optional)
- Place all ingredients in a bowl or air-tight container of your choosing. Mix together until well combined.
- Cover and refrigerate for at least 2 hours, but preferably leave overnight.
